Banana Blueberry Muffins We love these muffins I have made them several times changing up the recipe to make them healthier than they already are substituting natural apple sauce for the oil threw in some Chia seeds and flax seeds put in a few extra banans and splenda brown sugar for regular brown sugar. Make these blueberry banana muffins extra special by, lightly dusting with icing sugar, and add a fresh or defrosted blueberry on top, with a few mint leaves. Tip: To hold the blueberry in place, use a match stick sized piece of dry angel hair pasta as a skewer (make sure it doesn't go through the top of the blueberry). These muffins turned out pretty good - my banana's weren't ripe so their flavor didn't come through. I checked the nutritional content and these are pretty good.
