I became online friends with Shauna many years ago and she has knocked it out of the park with her books like Marshmallow Madness, Real Sweet, and Pure Vanilla. Midwest Made is her latest and it's a cozy blanket of a book filled with food from my. You can have Bran muffins using 9 ingredients and 7 steps. Here is how you cook that.
Ingredients of Bran muffins
- It's 2 cups of digestive bran.
- It's 2.5 cups of flour.
- It's 2 teaspoon of bicarbonate of soda.
- Prepare 1/2 teaspoon of salt.
- You need 2 of eggs.
- You need 2 cups of brown sugar.
- It's 1/2 cup of oil.
- You need 2 cups of milk.
- It's 1teaspoon of vanilla essence.
If muffins were baked in paper baking cups, immediately remove from pan to a cooling rack. Combine flour, baking powder, sugar and salt; set aside. Add egg and oil; mix well. TO MAKE GLUTEN FREE: I have not tried to make these muffins gluten free.
Bran muffins step by step
- Beat eggs then add sugar and beat until creamy.
- Now add oil and continue beating.
- Add milk and vanilla essence.
- Fold in dry ingredients bran,flour and bicarb.
- Mix together and preheat oven to 180degrees and prepare a muffin pan.
- Scoop dough into muffin paper cups on a muffin pan and baked for 20 minutes.
- Remove from heat,allow them to cool and enjoy.
It kind of defeats the point of a bran muffin. However, I do think you could sub all purpose flour or chickpea flour for the whole wheat pastry flour if you are looking for a flour. In a small mixing bowl, pour the boiling water over the half cup of cereal. When cooled, mix in the vegetable oil and egg. While the water/bran mixture cools, whisk together the flour, sugar, baking soda, baking powder and salt in a large mixing bowl.
