Ingredients of Field Peas

  1. It's 12 oz of dried field peas.
  2. Prepare 3 of chicken bouillon cubes.
  3. Prepare 1 T of garlic powder.
  4. Prepare 1 of tspn salt.
  5. Prepare 1 T of red pepper.
  6. Prepare 1 Cup of onion minced.
  7. It's 2 T of bacon grease.
  8. Prepare of Tabasco - 8 shakes.

Field Peas step by step

  1. Boil the peas for 2 minutes, drain, & cover with 2" water, sit for 4 hours minimum.
  2. Drain & just cover the peas with water, add garlic powder, salt, bouillon, & Cayenne. Bring to a low boil & let barely bubble for an hour.
  3. Saute the onion in bacon fat until just tender & add to peas.
  4. Turn heat up to medium-low & cook until peas are tender to preference, check seasoning.
  5. After they're added to your meal, they can be frozen! I pour them into Styrofoam cups to freeze dinner portions & easy defrosts..
